Right, so my wife likes to cook stuff like this… which pretty much makes me the luckiest guy in the world. I’m there to see it happen, but it’s still amazing to me. Like watching a medieval alchemist turn lead into gold.

Fresh Peach Pie – Mom’s recipe
Pastry for 2 9″ pie crusts
3/4 c sugar
5 c fresh sliced peaches
2 tbsp quick-cooking tapioca
1/8 tsp cinnamon
dash salt
1 tbsp lemon juice
1 egg
Line pie plate with pastry. Boil peaches for 1 min (for ease of peeling). Peel, pit, and slice peaches. Combine all ingredients and carefully mix. Pour into pie shell. Cover w/pastry, seal & flute edges. Cut a few slits in the top, whip egg and brush a coating of egg onto top to pie. Sprinkle with 1 tsp sugar. Bake 400 degrees 40-50 min. Garnish with remaining peach slices.
