		<description>Fresh Peach Pie - Mom&#039;s recipe

Pastry for 2 9&quot; pie crusts
3/4 c sugar
5 c fresh sliced peaches
2 tbsp quick-cooking tapioca
1/8 tsp cinnamon
dash salt
1 tbsp lemon juice
1 egg

Line pie plate with pastry. Boil peaches for 1 min (for ease of peeling). Peel, pit, and slice peaches. Combine all ingredients and carefully mix. Pour into pie shell. Cover w/pastry, seal &amp; flute edges. Cut a few slits in the top, whip egg and brush a coating of egg onto top to pie.  Sprinkle with 1 tsp sugar. Bake 400 degrees 40-50 min.  Garnish with remaining peach slices.</description>
